Ingredients
  

Crust

  • 1 ½ cups graham cracker crumbs or digestive biscuits, crushed
  • cup melted coconut oil or unsalted butter
  • 2 tbsp maple syrup or honey

Filling

  • 2 ripe avocados peeled and pitted
  • 1 package 200 g / 7 oz cream cheese, softened (or vegan alternative)
  • ½ cup full-fat coconut cream thick part only
  • ¼ cup lime juice freshly squeezed, about 2 limes
  • 1 tbsp lime zest
  • ¼ cup honey maple syrup, or agave syrup (to taste)
  • 1 tsp vanilla extract

Instructions
 

  • Prepare the Crust: Mix graham crumbs, melted coconut oil, and maple syrup. Press into a springform pan and chill.
  • Blend the Filling: Combine avocado, cream cheese, coconut cream, lime juice and zest, sweetener, and vanilla in a blender until smooth.
  • Assemble: Pour filling over the crust and smooth the top.
  • Chill: Refrigerate for at least 4 hours or overnight until firm.
  • Serve: Remove from the pan, garnish with lime or nuts, slice, and enjoy!

Notes

  • For a vegan version, use dairy-free cream cheese and coconut whipped cream.
  • You can swap honey or maple syrup with agave syrup.
  • Let the cheesecake chill overnight for best texture.
  • Garnish with thin lime slices, crushed pistachios, or fresh mint for an elegant finish.
  • Best served cold and consumed within 3 days.
