Crust
- 1 ½ cups graham cracker crumbs or digestive biscuits, crushed
- ⅓ cup melted coconut oil or unsalted butter
- 2 tbsp maple syrup or honey
Filling
- 2 ripe avocados peeled and pitted
- 1 package 200 g / 7 oz cream cheese, softened (or vegan alternative)
- ½ cup full-fat coconut cream thick part only
- ¼ cup lime juice freshly squeezed, about 2 limes
- 1 tbsp lime zest
- ¼ cup honey maple syrup, or agave syrup (to taste)
- 1 tsp vanilla extract
Prepare the Crust: Mix graham crumbs, melted coconut oil, and maple syrup. Press into a springform pan and chill.
Blend the Filling: Combine avocado, cream cheese, coconut cream, lime juice and zest, sweetener, and vanilla in a blender until smooth.
Assemble: Pour filling over the crust and smooth the top.
Chill: Refrigerate for at least 4 hours or overnight until firm.
Serve: Remove from the pan, garnish with lime or nuts, slice, and enjoy!
