- 1½ cups shredded unsweetened coconut divided
- ½ cup cashew butter
- ⅓ cup honey
- 2 tablespoons fresh lemon juice
- 2 tablespoons lemon zest
- 1 teaspoon vanilla extract
- ¼ teaspoon sea salt
- ½ cup white chocolate chips
- ¼ cup vanilla protein powder optional
- 2 tablespoons shredded coconut for rolling
- 1 teaspoon lemon zest for rolling
Toast 1 cup coconut at 325°F for 5-7 minutes until golden, then cool completely
Mix cashew butter, honey, lemon juice, lemon zest, vanilla, and salt until smooth
Stir in toasted coconut, remaining untoasted coconut, and protein powder if using
Fold in white chocolate chips gently
Chill mixture 15-20 minutes if too soft to roll
Roll mixture into 1-inch balls using cookie scoop
Coat balls in mixture of 2 tbsp coconut and 1 tsp lemon zest
Store in airtight container in refrigerator up to 2 weeks or freeze up to 3 months
