Ingredients
  

  • cups shredded unsweetened coconut divided
  • ½ cup cashew butter
  • cup honey
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • ½ cup white chocolate chips
  • ¼ cup vanilla protein powder optional
  • 2 tablespoons shredded coconut for rolling
  • 1 teaspoon lemon zest for rolling

Instructions
 

  • Toast 1 cup coconut at 325°F for 5-7 minutes until golden, then cool completely
  • Mix cashew butter, honey, lemon juice, lemon zest, vanilla, and salt until smooth
  • Stir in toasted coconut, remaining untoasted coconut, and protein powder if using
  • Fold in white chocolate chips gently
  • Chill mixture 15-20 minutes if too soft to roll
  • Roll mixture into 1-inch balls using cookie scoop
  • Coat balls in mixture of 2 tbsp coconut and 1 tsp lemon zest
  • Store in airtight container in refrigerator up to 2 weeks or freeze up to 3 months
