- 1 cup almond flour
- ¼ cup coconut flour
- ¼ cup maple syrup
- ¼ cup coconut oil melted
- 1 cup pitted dates
- ¼ cup cashew butter
- 2 tbsp coconut cream
- 8 oz dark chocolate 70% cocoa or higher
- Pinch of sea salt optional
Shortbread Base:
Mix almond flour, coconut flour, maple syrup, and melted coconut oil into a crumbly dough. Press into a lined 8x8-inch pan, prick with a fork, and bake at 350°F (175°C) for 10–12 minutes until golden. Let it cool completely.
Caramel Layer:
Soak and drain dates, then blend with cashew butter, coconut cream, and salt until smooth. Spread over the cooled base and refrigerate for 15 minutes to firm up.
Chocolate Coating:
Melt dark chocolate and pour over the caramel layer. Smooth it out, optionally sprinkle with sea salt, and refrigerate for 20–30 minutes. Once set, lift out and slice into 12 bars using a warm knife for clean cuts.
