Ingredients
  

  • All-purpose flour: 1 ½ cups 180g
  • Granulated sugar: 1 cup 200g
  • Baking soda: 1 tsp
  • Salt: ½ tsp
  • White vinegar: 1 tbsp
  • Vegetable oil: ⅓ cup 80ml
  • Pure vanilla extract: 1 tsp
  • Water: 1 cup 240ml, room temperature
  • Optional Topping or Frosting:
  • Powdered sugar for dusting
  • Vegan Chocolate Frosting: Vegan butter: ½ cup powdered sugar: 2 cups, cocoa powder: ¼ cup, vanilla extract: 1 tsp, plant-based milk: 1-2 tbsp

Instructions
 

  • Preheat oven to 350°F (175°C); grease and line a 9-inch pan.
  • Whisk flour, sugar, baking soda, and salt in a large bowl.
  • Make three wells; add vinegar, oil, and vanilla. Pour water over all and whisk until smooth.
  • Pour batter into pan; bake 30-35 minutes until toothpick is clean.
  • Cool in pan 10 minutes, transfer to rack to cool completely.
  • Dust with powdered sugar or frost with vegan chocolate frosting.
