Crust:
- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter cold, cubed
- 1/4 cup powdered sugar
- 1 egg yolk
- 1-2 tbsp cold water
- 1/4 tsp salt
Filling:
- 4 large eggs
- 1 cup granulated sugar
- 2/3 cup fresh lemon juice
- zest of 2 lemons
- 1/4 cup heavy cream
- 1/4 cup
Make crust: Pulse dry ingredients with butter, add egg yolk and water, chill 30 min.
Roll out, fit into 9-inch tart pan, blind bake at 375°F for 20-22 min.
Whisk eggs and sugar, add lemon juice, zest, cream, and butter.
Pour into crust, bake at 350°F for 20-25 min until set.
Cool and chill 2 hours.
