Ingredients
  

Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter cold, cubed
  • 1/4 cup powdered sugar
  • 1 egg yolk
  • 1-2 tbsp cold water
  • 1/4 tsp salt

Filling:

  • 4 large eggs
  • 1 cup granulated sugar
  • 2/3 cup fresh lemon juice
  • zest of 2 lemons
  • 1/4 cup heavy cream
  • 1/4 cup

Instructions
 

  • Make crust: Pulse dry ingredients with butter, add egg yolk and water, chill 30 min.
  • Roll out, fit into 9-inch tart pan, blind bake at 375°F for 20-22 min.
  • Whisk eggs and sugar, add lemon juice, zest, cream, and butter.
  • Pour into crust, bake at 350°F for 20-25 min until set.
  • Cool and chill 2 hours.
