Ingredients
  

  • 2 cups 500 ml heavy cream
  • 100 g dark chocolate 70% cocoa or higher
  • 1/4 cup 50 g granulated sugar
  • 1 ½ tsp 5 g unflavored gelatin powder
  • 3 tbsp 45 ml cold water
  • 1 tsp pure vanilla extract

Instructions
 

Bloom Gelatin

  • Sprinkle gelatin over cold water and let sit for 5–10 minutes to bloom.

Heat Cream Mixture

  • In a saucepan, heat the heavy cream, sugar, and vanilla over medium heat until hot but not boiling.

Melt Chocolate

  • Add chopped dark chocolate to the hot cream and stir until completely melted and smooth.

Incorporate Gelatin

  • Remove from heat. Add bloomed gelatin and stir until fully dissolved.

Strain and Pour

  • Strain the mixture for extra smoothness, then pour into ramekins or glasses.

Chill to Set

  • Refrigerate for at least 4 hours, or until fully set.

Serve and Enjoy

  • Unmold carefully or serve in the glass. Garnish with berries, chocolate shavings, or whipped cream.

Notes

  • Use high-quality dark chocolate (70% or higher) for a rich, luxurious flavor.
  • Make sure to bloom gelatin properly in cold water before adding it to warm cream to avoid lumps.
  • For a vegan version, replace dairy with coconut milk and use agar-agar instead of gelatin.
  • Serve with fresh berries, whipped cream, or a drizzle of raspberry coulis for added flair.
